Probably the worst fennel salami I have ever eaten,wrong texture,over salted,to many whole black pepper corns and not enough fennel. Have been eating fennel salami for many years both from Italy and England and this one is all wrong,the only one that leaves a nasty taste in the mouth and very expensive when p&p is factored in.Avoid,there are better.Would not recomber to my worst enemy.

Due to my job, I have eaten a lot of charcuterie in my life, and I feel compelled to leave a review to highlight the absolute mastery of the Marsh Pig team. Their Fennel Salami and Chorizo are the best I have ever eaten by a country mile. Please never stop doing what you are doing and never change the method by which you achieve these amazing results! Went on one of their courses a couple of weeks ago. Had a great day, learnt a lot. Course was very relaxed and informative. Three weeks into curing my first Salami, seems to be going fine at the moment, looking forward to tasting it.

Spent a day doing the smoking and curing course last Sat at Marsh Pig with my son in law.What a wonderful day! Jackie and Sarah not only taught us so much, but put on wonderful food and wine as well. We absolutely loved it and the sausages were delicious and the salamis are curing nicely. I am so inspired I can't wait to do my own. Highly recommend

well, as stated before i had a great day came away with loads of enthusiasm - salami- bacon- sausages - and most of all knowledge of charcuterie Fantastic. since completing the very well organized day i have produced my own sausages(i will say not a patch on the ones we made on the course) but i will try another recipe. my own bacon should be started this week and beef jerky Awesome!

My husband and I went on the Marsh Pig Charcuterie workshop and had an absolutely fantastic experience. Jax and Sarah were so professional, knowledgeable and fun to listen to. The course was very hands on and because we were a small group of 8, we got lots of one-to-one time with our hosts. We made bacon, salami and sausages ourselves and were also taught jerky, bilton, panchetta, hot and cold smoking all in one day. It was a unique and memorable experience and I wold highly recommend it.
